While the cookies are hot, press an indentation into the center of each one with your thumb and fill with a little jam.
This one is also healthy oatmeal raisin cookies. So you can make 20 cookies from this recipe.
- Scant 1 cup/150 g all-purpose flour
- 1 tsp baking soda.
- 1/3/4 cups/175 g rolled oats
- 1/2 cup/1 stick/125 g butter
- 1/2 cup/100 g packed light brown sugar
- 1 tbsp light corn syrup
- 1 tbsp water
First, you preheat the oven to 350F/180C. Lightly grease two baking sheets. Sift the flour and baking soda into a mixing bowl. Stir in the oats.
Second, place the butter, sugar, corn syrup, and 1 tablespoon water in a pan and heat gently, stirring until combined. Add to the dry ingredients and stir until well mixed.
Third, take small amounts of the dough, each about the size of a walnut, and roll into balls. Space them well apart on the baking sheets and flatten slightly.
Finally, bake until golden, 16 to 18 minutes. Let cool on the baking sheets for 2 to 3 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for up to five days.
